Main staple in local cuisine of the century, especially cooked grilled, baked, or with pasta, potato purple was the food of all farmers of the plateau.The loose soil of the plateau are rich in potassium and microclimate is excellent. The strong temperature variation between day and night encourage the increase of sugars in the tubers making them sweeter.A set of favorable factors make the ubiquitous potato crops in this region of Calabria.The potato variety currently grown are Dutch (Agria, Desiree, suggestions, Liset) but recently the center of ARSSA Molarotto has selected and is replanting the old local variety, the purple potato. It is characterized by a deep eggplant-colored skin and the white paste. Kg 2.00
