The Ingredients: 8 medium-sized squid, 1 clove of garlic, 200 grams of bread crumbs, 2 eggs, 100 grams of green olives, a handful of capers, a little 'dry white wine, olive oil, salt and pepper; for sauce, 250 grams of peeled tomatoes, parsley, olive oil and salt.
Clean the squid by removing the entrails, cut the tentacles into small pieces, dry them and put to fry in a pan with a tablespoon of olive oil, salt and sprinkle with a little 'wine, letting it simmer. After having drained and put away, to wither in the same cooking oil a clove of crushed garlic and mix in the tomatoes, chopped parsley and a pinch of salt, stir and cook the sauce in a very gentle fire for ten minutes.
Meanwhile prepare the filling, beating the eggs in a bowl and mix in the breadcrumbs, fried tentacles, pitted and chopped olives, the capers, and chopped and a pinch of pepper, mix all ingredients well.
With this stuffing fill the squid, taking care to sew the ends' with string or close with toothpicks xi teeth, place the stuffed squid in tomato sauce to cook for about twenty minutes.
Variation: Fill the squid with a stuffing of bread crumbs, bits of fried tentacles, chopped olives, chopped capers, some anchovies desalted into pieces, mint, basil and pepper, put the stuffed squid like to bake in a pan with oil and a little 'white wine.
Another way to stuff them can 'be a stuffing made with bits of fried tentacles, cubes of melted cheese, bread crumbs, grated cheese, boiled peas and chopped celery and carrots, cook them in a pan with tomato sauce as the recipe basa.
